You may know about magnetic induction cooktops that are rivaling microwaves for speed and convenience. Now another new cooking technology has been announced. Ovens that use light waves from high-intensity halogen bulbs cook food in half the time a conventional oven does. Unlike microwaves, introduced more than 25 years ago, that cook from the inside out, light waves cook from the exterior inward just like regular ovens do, but they penetrate foods faster and get the job done in much less time. Some prototypal ovens combine microwaves and infrared heat to brown outer surfaces. Others use small jets of super-heated air to assist lightwave cooking.
