The Carey Brothers and Rebecca Cole were back together again to help America out with improving their homes. SPRING LOVES A MOJITO!
With mint from the garden in full bloom, my friend Eric and I love an afternoon on the patio with a Mojito, Stuffed Piquillo Peppers, Grilled Shrimp on Garlic Toasts and Cuban music…Perfect!
The Mojito is all about The Art Of Muddling. Muddling is the act of releasing the fragrant oil from the mint leaves by applying pressure. As you smash the leaves with the lime juice and sugar you will see a syrup begin to form - this is the art of a great mojito. Once you've achieved mint syrup, add mountains of ice, rum and
finish off with club soda.
- 1/4 cup lime juice
- 2 teaspoons Super Fine Sugar
- 12 fresh mint leaves
- 3 ounces White or Light Rum
- Club Soda
- Lots of Ice
- Slices of Lime, for garnish
Combine the lime juice, mint and sugar in a Collins or highball glass. Muddle the mixture together to bruise the mint and form a syrup. Add the rum and stir to combine. Fill two serving glasses with ice. Divide the Rum mixture between two glasses and top off the glasses with Club Soda to taste. Stir well, garnish with lime slices and Enjoy!
{ Makes 2 Mojitos }
JAMIE’S SUMMER SLING
A simple take on the classic!
- 2 ounces aged Rum
- 6 ounces pineapple juice
- Pineapple wedges
Place crushed ice in a cocktail glass. Pour pineapple juice and Rum over the ice. Top with freshly grated nutmeg and garnish each glass with a pineapple wedge.
MARGARITAS FOR 4
- 1 lime, cut in half
- coarse sea salt
- 1/2 cup freshly squeezed lime juice (from about 4 limes)
- 2 tablespoons superfine granulated sugar
- 1/2 cup Triple Sec
- 1 cup Gold tequila
- Ice Cubes
To salt the margarita glasses, rub the outside rims of 4 big glasses with the cut lime and press the rims of the glasses lightly into a plate of salt, to coat. Combine the lime juice, sugar, Triple Sec, tequila and two big handfuls of ice in a large cocktail shaker, pitcher or blender. Shake, stir or blend the margaritas well, about 15 seconds, then strain into the salt rimmed glasses and serve.
