Spinach Corn Soufflé

Popeye loves his spinach and you will too, especially when mixed with other tasty ingredients.

This is OK...trust me...it works!

1 8 ½ oz. package corn muffin mix
4 eggs, beaten (or egg equivalent or egg whites)
1 10 ½ oz. can cream of mushroom soup
1 14 oz. can cream-style corn
1 cup nonfat mozzarella, shredded (or American cheese, shredded)
1 10 oz. package frozen chopped spinach, thawed (or 2 cups leftover fresh spinach)
pepper to taste

Place muffin mix in a large mixing bowl. Add the rest of the ingredients. Mix well.

Grease a large baking dish. Pour the soufflé mixture into the baking dish. Bake at 300 degrees about 1 hour, until golden brown on top.

Remove from the oven and let sit for 25 minutes before serving.

This is a great dish for buffets.

Serves 8-10.
