Corn Muffins

Little Miss Muffet loved Dom's Muffins!

Preheat oven to 375 degrees.

2 tablespoons butter
1 red pepper, chopped
1 small onion chopped
1 1/2 cups cornmeal
1 1/4 cups flour
1/2 cup sugar
3 tablespoons cornstarch
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
3 eggs
6 tablespoons butter, melted
1 cup shredded Jack cheese
1 cup corn, drained

Grease muffin tin and set aside. In a medium skillet, melt 2 tablespoons butter and sauté peppers and onions until tender.

In a large bowl, combine cornmeal, flour sugar cornstarch, baking powder, salt and set aside. In a medium bowl, whisk together milk, eggs and 6 tablespoons melted butter. Pour into cornmeal mixture. Add red pepper, onion, cheese and corn and fold until all is distributed evenly throughout the batter.

Pour batter into muffin cups and bake 20 minutes, or until toothpick comes out clean.

Makes 1 dozen muffins
