Lemon Squares

A wonderful dessert that feeds a lot of hungry mouths.

1 cup flour
½ cup butter, softened
¼ cup powdered sugar
2 eggs
¼ teaspoon salt
1 cup sugar
3 tablespoons lemon juice
grated rind of 1 lemon
2 tablespoons flour
½ teaspoon baking powder
powdered sugar

Preheat oven to 350 degrees.

In a large mixing bowl, cream together the flour, butter and sugar. Press the dough into a greased 8 or 9 inch square pan. Bake at 350 degrees for 20 to 25 minutes.

While crust is baking, beat the eggs, salt, sugar, lemon juice and rind. Fold in the two tablespoons of flour and baking powder.

Pour over baked crust and bake for 25 minutes. Let squares cool completely before cutting. Sprinkle with lots of powdered sugar.

Makes about 20 squares.
