Breakfast Bonanza

A family-style breakfast that will leave you stuffed!

This serves 8 to 10 happy people.

8 to 10 slices of Italian bread
16 eggs
½ cup milk
1 teaspoon salt
½ teaspoon Tabasco
2 ounces butter
8 ounces softened goat cheese
1 ½ ounces marinated sun-dried tomatoes, julienned
1 cup fresh basil, chopped
1 cup prepared pesto sauce

Toast the bread while making the eggs. In a large mixing bowl combine the eggs, milk, salt, pepper and Tabasco and whisk until smooth.

In a large non-stick frying pan, melt the butter. Add the eggs and scramble. Spread the goat cheese on the toast and top with scrambled eggs. Garnish with sun dried tomatoes, fresh basil and a spoonful of pesto. Yum!

Serves 8 to 10

A Mexican variation:

1. Melt Jack cheese on the bread while it is toasting.
2. Replace the sun-dried tomatoes with a zesty salsa.
3. Replace the basil with cilantro.
4. Top with a spoonful of guacamole and sour cream!
