Chicken Chow Mein
A Chinese dish with Italian flair!
6 cups crispy Chinese noodles
or
3 cups cooked white rice
or both
2 tablespoons vegetable oil
4 cloves garlic, minced
1 tablespoon peeled and grated ginger
1 onion, cut in crescents
2 celery stalks, cut diagonally
1 pound skinless, boneless chicken, cut into cubes
1 red pepper, seeded and sliced thin
1 green pepper, seeded and sliced thin
2 cups bok choy, trimmed and cut into 2-inch lengths
1 cup bean sprouts
3 tablespoons hoisin sauce
1/4 cup chicken broth
1 teaspoon cornstarch
In a wok, heat vegetable oil. Add garlic, ginger onion and celery, and stir-fry until onion softens slightly, about 3 minutes. Add chicken and stir-fry until browned, about 3 to 4 minutes. Add peppers, bok choy, and bean sprouts and stir-fry until tender, but crisp, about 2 minutes.
Stir in hoisin sauce, chicken broth and cornstarch and cook until sauce boils and thickens, about 2 minutes. To serve, arrange Chow Mein on top of crispy noodles or steamed white rice.
