3 tablespoons olive oil
1 red onion, chopped
4 garlic cloves, chopped
1 Serrano pepper, chopped
3 cups pineapple juice
24 jumbo scallops
salt and pepper to taste or Dom DeLuise All-Purpose Blend
Heat oil in a small saucepan over medium heat. Add onion and garlic and cook until soft. Add pepper and pineapple juice and raise heat to high, bring to a boil. Reduce to 1 cup. Blend until smooth and let cool.
Heat grill over medium heat for five minutes. Spray grill lightly with Pam or olive oil. Season scallops with salt and pepper or Dom DeLuise's All Purpose Blend. Grill 3 minutes each side. Remove the scallops from the grill and serve with the hot sauce.
