Peach Cake
Try this peachy keen recipe for the family!
Preheat oven to 350 degrees
1 cup flour
1 teaspoon baking powder
¼ teaspoon salt
2 tablespoons sugar
2 tablespoons butter
1 egg
½ teaspoon vanilla
½ cup milk
3-4 ripe peaches, peeled and sliced
2/3 cup sugar
2 teaspoons cinnamon
3 tablespoons melted butter
In a large bowl, sift together the flour, baking powder, salt and sugar. Add the 2 tablespoons of butter and work into a pastry dough.
In a medium bowl, beat together, egg, vanilla and milk. Add to dough mixture above and mix. Pat into a 9 x 9 x 2 greased baking pan.
Spread the sliced peaches over dough. Sprinkle the top with sugar, cinnamon and melted butter.
Bake for 25 to 30 minutes.
Serves 8
