This salsa is delicious on grilled halibut or catfish, and just as good on tortilla chips!
1 tomato, diced
1 small onion, finely minced
2 tablespoons cilantro, finely chopped
1 cup peeled and cubed jicama
1 orange, peeled and diced
juice of one lime
dash of cayenne pepper
2 teaspoons light olive oil
salt to taste
Combine all ingredients in a bowl, toss to mix and refrigerate until ready to use or until flavors mingle.
