Baked Apples
Get your serving of fruit the yummy way!
1/4 cup chopped walnuts
1/4 cup your favorite granola
4 large Fuji apples
1/4 cup brown sugar, packed
2 tablespoons butter, softened
1 tablespoon cinnamon
1/4 cup honey
1/2 cup apple juice
Preheat oven to 350 degrees.
Lightly toast walnuts by spreading on foil in a toaster oven. Core apples, making a whole in the center for stuffing.
In a medium bowl, combine walnuts, granola, brown sugar, butter and cinnamon. Toss gently to mix thoroughly.
In a small pot, heat the honey and apple juice, stirring until warm and liquids are combined.
Place apples in a casserole dish. Stuff apples with walnut and granola mixture. Pour honey apple juice around the apples, spooning just a little in the center stuffed part.
Bake for about 40 minutes, basting occasionally. Let apples cool and serve with vanilla yogurt and the honey apple juice syrup on top.
Serves 4
These are a great dessert, snack and even make a wonderful breakfast.
