Dom's Stuffed Red Peppers
This Will Spice Up Your Life!
1 onion, chopped fine
1 pound lean ground turkey
4 cloves of garlic, chopped
1 tablespoon Dom DeLuise Italian Blend
4 large red bell peppers cut lengthwise
1 1/2 cups of rice, uncooked
1/2 cup finely chopped parsley
1 26 oz. jar prepared tomato sauce
1/2 cup shredded mozzarella
Preheat oven to 350 degrees
In a large skillet, sauté onion and garlic until lightly browned. Add ground turkey and sauté, breaking it up with a fork as it browns. Sprinkle the ground turkey with Dom DeLuise Italian Blend.
While meat is browning, prepare peppers by slicing lengthwise, remove seeds.
Cook rice according to package directions.
Drain ground turkey of any fat and leave in skillet. When rice is cooked, add to skillet and add parsley and the jar of tomato sauce (reserving about 8 tablespoons). Stir to mix all ingredients.
With a large spoon, fill the halved peppers. Place filled peppers in a baking dish, add about 1 cup of water to the bottom. Place a tablespoon of tomato sauce on the top of each filled pepper. Cover with foil and bake for about 45 minutes to 1 hour, or until peppers are tender. Sprinkle with shredded mozzarella just before serving.
