Dom's Ceviche
This is a seafood lover's dream!
1 pound fresh raw skinless striped bass, snapper, halibut or other white fish fillets, cut into bite-sized pieces
1/4 pound cooked small bay shrimp, chopped
juice of 6 to 8 limes
1 small red onion, diced
3 Roma tomatoes, diced
4 pickled Serrano or jalapeno chilies, finely chopped
4 tablespoons olive oil
1 tablespoon vinegar
1 tablespoon Dom DeLuise Italian Blend
1/2 cup fresh chopped cilantro
2 avocados, slightly firm, peeled, pitted and diced
Tortilla chips, for serving
Rinse fish in cold water and cut into bite-sized pieces. Place in a large bowl and pour lime juice over all. Let stand in the refrigerator for at least 3 hours, turning fish pieces with a spoon every hour.
Add remaining ingredients and let stand in frig another 20 minutes.
Serve very cold with tortilla chips.
