Dom's Stuffed Chicken Breasts

One of my Favorites! - A Special Recipe for Labor Day Weekend

Dom's
Stuffed Chicken Breasts


4 boneless chicken breasts
2 tablespoons Dom DeLuise All-Purpose Blend

2 tablespoons olive oil
1 garlic clove, minced
1/4 cup chicken broth
1 1/2 pounds spinach, thoroughly rinsed and stems removed
salt and pepper to taste
4 ounces goat cheese
1/2 cup dry white wine


Preheat oven to 350 degrees.

On a chopping board, cover chicken breasts with plastic wrap and lightly pound until about 1/2 inch thickness. Season with Dom DeLuise's All Purpose Blend.

In a large skillet, heat olive oil. Add garlic and sauté until garlic is very light golden. Add the chicken broth and spinach. Sprinkle with salt and pepper to taste. Only cook the spinach a few minutes until wilted and transfer to a cookie sheet to cool.

When spinach is cooled, place in a bowl and add goat cheese. Spray a large casserole dish with olive oil or cooking spray. Lay each chicken breast out and top with spinach and cheese mixture. Roll each chicken breast and place seam side down in casserole dish. Add white wine and bake about 45 minutes.
