3 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
2 tablespoons brown sugar
1 1/2 cups buttermilk
1 cup of toasted walnuts (or pecans) chopped
2 teaspoons vegetable oil
more toasted nuts for topping
Sift the flour, baking powder and salt into a large bowl. Add eggs, buttermilk and toasted nuts and stir. Heat the oil on a griddle, ladle 2 tablespoons of batter onto the griddle and cook on each side. Transfer to a plate and keep warm.
Top with more chopped nuts, butter, and maple syrup.
Optional: Add vanilla ice cream!
