Dom's Open Faced Salmon Sandwich

Served with a salad and a lovely glass of white wine, this dish makes a lovely lunch, or a simple light dinner

4 salmon filets (flat tail filets work best for this recipe)
1 tablespoon olive oil
salt and pepper to taste

2 tablespoons dry mustard
3 tablespoons brown sugar
1/2 teaspoon soy sauce
2 teaspoons olive oil

2 tablespoons butter
4 slices of sour dough bread
Dom DeLuise Italian Blend

Brush salmon with olive oil. Add salt and pepper to taste. Saute or grill salmon about 5 minutes per side.

While salmon is cooking, whisk together mustard, brown sugar, soy sauce, olive oil and set aside.

Butter bread, sprinkle with Italian Blend and toast or grill.

On individual plates, place toasted bread, top with salmon filet and drizzle with mustard sauce.
