Use with a wonderful rice product from Rice River Farms and developed this recipe to use with their "Autumn Harvest" rice.
1 package Rice River Farms Autumn Harvest Rice
8 large tomatoes
1/2 cup tomato juice
1 tablespoon olive oil
1/4 cup finely chopped fresh basil
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons grated Parmesean cheese
2 tablespoons Dom DeLuise Italian Blend
Preheat oven to 350 degrees. Cook rice according to package directions, reducing cooking time and seasoning packet in half. When rice is partially done, drain and transfer to a bowl. I leave out the butter, but that is optional
Oil a baking dish large enough to hold the tomatoes snugly.
Cut off the top of each tomato and reserve. Using a small spoon, scoop out the tomato seeds and juice. Let tomatoes drain upside-down for a few minutes. Arrange the tomatoes in the prepared baking dish.
Add all remaining ingredients to the rice and mix well. Spoon the rice into the tomatoes and cover each with its reserved top.
Bake 15 to 20 minutes, until rice is tender. Remove from the oven and serve hot, or at room temperature.
