Carol's Favorite Chicken
This is my lovely wife's favorite chicken dish!
1 cup flour
3 pounds of chicken pieces, washed and patted dry
1/2 cup olive oil
1 onion, chopped
2 garlic cloves, chopped
2 carrots, chopped
2 celery stalks, chopped
2 tablespoons chopped fresh rosemary
2 tablespoons Dom DeLuise Italian Blend
1 large can (24 oz.) chopped tomatoes
about 15 mushrooms, sliced
1 cup dry red wine
1 cup chicken broth
Place the flour in a large bowl and dredge the chicken parts.
In a large skillet, over medium heat, brown the chicken in olive oil until browned on all sides. Transfer chicken to a platter. Add the onion, garlic, carrots celery, rosemary and Italian Blend and sauté about 5 minutes.
Return the chicken to the skillet. Add the tomatoes, mushrooms, red wine and chicken broth. Bring to a boil and simmer for 50 to 60 minutes.
Serve with risotto or polenta.
