3 large onions, chopped
8-10 mushrooms
8-19 potatoes, peeled and boiled
2 tablespoons olive oil
4 carrots, shredded
3 eggs
1 cup (or more) Matzo meal
salt and pepper to taste
Sauté onions and mushrooms while potatoes are boiling. Drain and mash potatoes. Add cooked onions and mushrooms to potatoes and mix together. Add the shredded carrots, eggs and enough Matzo meal to soak up the liquid.
Spray a casserole dish or lasagna pan with non-stick spray. Spoon entire potato mixture into casserole dish. Sprinkle with salt and pepper.
Bake at 325 degrees for about 40 minutes, or until nicely browned.
