Red Snapper

This recipe is delicious served on a bed of brown rice, and healthy too!

Besides red snapper, you can substitute halibut, cod or haddock.

1 red pepper, sliced
1 yellow pepper, sliced
8 mushrooms, sliced
3 scallions, mined
6 fish fillets
1 tablespoon coriander
2 tablespoons light soy
6 tablespoons olive oil
4 garlic cloves, minced
1/2 cup white wine
lemon wedges for serving

Preheat oven to 350 degrees.

Place the red and yellow peppers, mushrooms and scallions in a baking dish. Add the fish fillets and top with remaining ingredients. Cover with foil and bake for 35 minutes.

Serve with lemon wedges and a smile!
