Don't forget to keep a glass of milk handy when you're enjoying this one!
1 cup butter, softened (2 sticks)
1 cup sugar
1/2 peanut butter
1 egg
3 cups flour
1 cup dry roasted peanuts, chopped
1 cup grape jam
Preheat oven to 350 degrees. Line a 9-inch metal baking pan with foil and grease foil.
In a large bowl, on low, beat butter and sugar until creamed, scraping down the sides. Increase speed to high and beat until light and fluffy.
Return speed to low and beat in peanut butter and egg, scraping the bowl down when necessary. Beat in flour until evenly moistened. Dough will be crumbly. Beat in peanuts.
Press half the dough into the bottom of pan. Spread grape jam over dough. Top with chunks of remaining dough, leaving spaces between chunks.
Bake until golden brown (45 to 50 minutes. Cool completely.
When cool, transfer with foil to a cutting board and cut into strips and then across to make bars.
