These make a wonderful appetizer or a healthy light lunch.
1 head iceberg or butter lettuce
2 pounds ground chicken or turkey
2 tablespoons olive oil
2 tablespoons Dom DeLuise Italian Blend
1 can water chestnuts, drained and chopped
1/4 cup green onion, chopped
1/2 cup shredded carrot
1 cup rice noodles (small white "glass" noodles)
chopped peanuts (optional)
Hoisin sauce
Arrange whole washed lettuce leaves on a platter. Saute ground chicken in olive oil, crumbling as it cooks. Sprinkle with Dom's Italian Blend. Add chopped water chestnuts and sauté a little longer. When chicken is thoroughly cooked, spoon into lettuce leaves.
Top with green onion, shredded carrot, rice noodles, chopped peanuts and a dollop of Hoisin sauce.
