2 12 oz. to 16 oz. pork tenderloins
2 red onions
1 pound zucchini
12 large mushrooms, stems removed and rinsed
12 cherry tomatoes
2 bell peppers, red, green or yellow
Dom DeLuise Italian Blend
1 cup your favorite BBQ sauce
Crushed red pepper flakes (optional)
If using bamboo skewers, soak in water for at least 1/2 hour. If using steel skewers, lightly oil.
Cut tenderloins into bite-size chunks. Cut onions into thick crescents. Slice zucchini into thick slices. Cut bell peppers into wide strips. Sprinkle all ingredients with Dom DeLuise Italian Blend. Place barbeque sauce in a small bowl and sprinkle with crushed red pepper flakes for an added zing.
Arrange on skews alternating ingredients. Brush on BBQ sauce and grill over a medium/hot flame 20 to 30 minutes. Brush on more BBQ sauce every time you turn skewers.
Delicious served with fresh sweet corn and a big salad.
