A taste from Italy, wrapped up in a neat sandwich!
Marinade:
1/4 cup olive oil
4 teaspoons red wine vinegar
1 tablespoon Dom DeLuise Italian Blend
1/4 teaspoon crushed red pepper
4 boneless and skinless chicken breasts, pounded thin
2 tablespoons olive oil
2 garlic cloves, chopped
4 slices of Italian bread
goat cheese or herbed semi-soft cheese
1 jar roasted red peppers, cut into strips
fresh basil leaves
In a small bowl, whisk together oil vinegar, Dom's Italian Blend and crushed red pepper and set aside.
Place chicken in a Ziploc bag and add marinade. Marinate in the refrigerator at least one hour.
Lightly oil your grill. Place chicken on grill and cook 8 to 10 minutes per side.
In a small bowl, combine olive oil and garlic. With a pastry brush, coat both sides of Italian bread. Place bread on grill and toast for about one or two minutes…being careful not to burn. Remove bread from grill and spread with cheese. Place a chicken breast on each and top with red peppers and a couple of basil leaves.
