1 leg of lamb, boneless, trimmed
8-10 garlic cloves, chopped
2 teaspoons fresh chopped rosemary, OR 2 teaspoons Dom's All-Purpose Seasoning Blend
salt to taste
Preheat oven to 450 degrees.
Place chopped garlic on roast and roll. Tie to secure with string. Rub the outside of the roast with the rosemary and sprinkle lightly with salt. In a large roasting pan, place roast on a rack. Bake uncovered for 1 1/2 hours or until thermometer reads 155 degrees for medium, 140 if you like it a little rare.
When cooked to desired doneness, remove roast and let it rest on a cutting board for about 10 minutes. Remove string and slice.
