Cream of Any Vegetable Soup

Broccoli, asparagus, potato and carrots all work great for this delicious and simple soup!

2 pounds broccoli, chopped (tough ends of stems removed)
1 onion, chopped
2 garlic cloves, chopped
2 tablespoons olive oil
5 cups chick broth
1/2 cup half and half
salt & pepper to taste
juice of one lemon
croutons or garlic rounds

Chop, peel and prepare your favorite vegetable.

In a large stockpot, cook onion and garlic in olive oil until tender. Add chopped vegetable and sauté a few minutes. Add broth and simmer about 20 minutes or until vegetable is tender.

Puree using a wand blender right in stockpot. Stir in half and half. Simmer on low until ready to serve.

Season with a squeeze of lemon juice. Garnish with croutons or garlic rounds.

Barbara Morgan, Waco TX; When a recipe calls for flour to be sifted is it really necessary? Is there a way around it if you do not own a sifter? I cannot stand having one more 'tool' in my kitchen.

Answer: I don't sift my flour when making bread…but when mixing in baking soda and baking powder for cakes and pastries, it's usually a good idea to sift the ingredients together so it is evenly dispersed. (Dom also will mention using a strainer.)

Tip:

Sometimes those rubber windshield wipers don't really need replacing.

I always used to replace the windshield wiper blades when they started streaking my windshield -- until I found out sometimes they are just dirty. Try washing them with baking soda and water and the abrasive side of a pot scrubbing sponge.
