Dom's Sweet Potato & Corn Salad
This Makes a Delicious and Different Side Dish for Ribs, Burgers or Chicken.
Dressing:
1/3 cup olive oil
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1 tablespoon Dijon style mustard
1 tablespoon lemon juice
1 tablespoon Dom DeLuise Italian Blend
Combine all ingredients in a jar. Shake to mix and refrigerate until ready to use.
2 cups diced and peeled sweet potatoes
1 large can corn, drained
1/2 cup chopped red onion
1/2 crumbled feta cheese
1/4 chopped fresh parsley
1 can black beans, drained
1 can black eyed-peas, drained
Blanch diced sweet potatoes in boiling water for 3 minutes until tender. Drain and cool.
In a bowl, mix sweet potatoes, corn, onion, fete cheese, parsley, black beans and black-eyed peas. Toss with some of the dressing and refrigerate 1 hour to let the flavors marry.
