Dom's Lamb & Brown Rice

A Delicious Slow Cooker Recipe

1 tablespoon olive oil

1 2 pound boneless lamb shoulder roast, fat trimmed

2 1/2 cups V-8 juice

1 cup uncooked brown rice

1 tablespoon Dom DeLuise Italian Blend

1 tablespoon rosemary

2 carrots, chopped

1 onion, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

In a large skillet heat olive oil and cook meat over medium heat, until browned on all sides. In your slow cooker, combine V-8 juice, rice, Dom DeLuise Italian Blend and rosemary. Add lamb and top with carrots and onions. Cover and cook on low for about 8 hours. In the last hour of cooking, add green and red peppers.
