Dom's Garlic Mashed Potatoes

Well Worth the Garlic Breath!

6 garlic cloves, unpeeled
2 tablespoons olive oil
1 tablespoon rosemary, finely chopped
6 potatoes
1/2 stick of butter
1/2 cup milk
salt and pepper to taste

Preheat oven to 325 degrees

Place whole garlic cloves in a small baking dish, drizzle with olive oil and
sprinkle with rosemary. Cover with foil and bake about 35 minutes, until
garlic is soft. When garlic is cool, squeeze from skins. In a small bowl
mash the garlic with a fork.

In a saucepan, bring potatoes to a boil and cook until tender, about 20
minutes.

In a small saucepan, heat the butter and milk over a low heat until the
butter is melted. Drain potatoes and mash well. Add the butter and milk
mixture and mash until smooth. Mix in the garlic and season with salt and
pepper.

Serves 4 to 6.
