Dom's French Onion Soup

To Warm Your Chilly Days!

2 tablespoons olive oil
4 or 5 onions, cut into crescents
3 cans beef broth
3 cans water
1 package dry onion soup
1 cup croutons
1 cup shredded Mozzarella or Swiss cheese
chopped parsley

In a large saucepan over medium heat the olive oil. Add onion and cook 20 minutes, stirring frequently. Add beef broth, water and the dry onion soup mix. Bring to a boil. Reduce heat and simmer till ready to eat.

Preheat broiler. Ladle soup into large ovenproof soup bowls. Top with croutons and cheese. Broil until cheese is melted. Top with chopped parsley.

Serves 6-8
