Dom's Chicken & Tortellini Soup

A Hearty Soup for a Chilly Afternoon!

2 pounds boneless, skinless chicken

2 tablespoons olive oil

2 carrots, chopped

1 onion, chopped

2 celery stalks, chopped

3 cups chicken broth

2 cups water

1 package prepared cheese tortellini

Parmesan cheese

fresh chopped parsley







In a large skillet, brown chicken in olive oil until pink is gone. Remove chicken and when cool enough to handle, cut into bite-sized pieces. Add carrots, celery and onion to skillet and sauté until tender.

In a large stockpot, heat chicken broth and water. Stir in chicken, carrots, celery and onion. Add prepared cheese tortellini and simmer 3 or 4 minutes until tortellini are heated through.



Serve in individual soup bowls and top with a sprinkle of Parmesan cheese and a sprinkle of parsley.

Serves 4 to 6
