Dom's Banana Bread

Perfect For Holiday Company!

3 ripe bananas, mashed

3 eggs, lightly beaten

1/2 cup light vegetable oil

1/2 cup buttermilk

1 cup sugar

2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon grated nutmeg

1/2 teaspoon salt

3/4 cups chopped walnuts



Preheat oven to 350 degrees.

Lightly grease a 9 x 5-inch loaf pan.

Place the first 4 ingredients in a blender and blend until smooth. Add the buttermilk and blend again.

In a large bowl, sift together the flour, baking powder, baking soda, nutmeg and salt. Add sugar. Stir in the nuts. Add the banana mixture to the flour mixture and stir until combined. Batter will be slightly lumpy.

Pour batter into loaf pan and bake 55 minutes or until a knife inserted comes out clean. Let bread cool and cut into slices.

Makes 1 loaf

Great with Cool Whip or ice cream.
