1 6-ounce package sweetened dried cranberries
1 8-ounce package chopped dates
1/2 cup water
1 teaspoon vanilla
1 cup whole wheat flour
1 cup white flour
2 cups oats
1 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
Preheat oven to 350 degrees.
In a saucepan on low heat, simmer cranberries, dates and water. Stirring constantly simmer until all water is absorbed. Remove from heat and stir in vanilla.
In a large bowl, combines flours, oats, brown sugar, baking soda and salt. Stir in butter until well blended. Place half of the flour mixture into an ungreased 9 x 13 inch pan. Bake for 8 minutes. Spoon cranberry mixture over bottom crust. Place remaining half of flour mixture on top.
Bake 20 minutes until lightly browned. Let cool and cut into squares.
