Blueberry Pancakes for Carol
My wife, Carol, loves her blueberries and I try to be creative and think of healthy ways to supply her dose. Try these delicious pancakes for breakfast, and start your day right, just like my wife, C
2 1/2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3 cups low-fat buttermilk
3 tablespoons vegetable oil
1 teaspoon vanilla
1 cup fresh blueberries
serve with honey or pancake syrup
In a large bowl, sift dry ingredients together. Add eggs, buttermilk, oil and vanilla, and mix well to make a smooth batter. Gently fold in blueberries.
Spray a non-stick skillet with Pam and heat over medium high heat until hot. Pour batter and cook until bubbles form, turn and repeat until pancakes are golden.
Makes a batch!
Options to mention:
Replace blueberries with 1 cup chopped nuts OR
1 cup canned corn, drained OR
1 cup raisins
