You don't have to wait until Thanksgiving to serve this delicious vegetable. Acorn squash is delicious any time, and is a great substitute for the usual side of mashed potatoes or rice.
6 tablespoons butter
6 tablespoons maple syrup
2 tablespoons minced crystallized ginger
salt & pepper to taste
4 acorn squash
Preheat oven to 375 degrees.
In a small saucepan, over medium heat, combine butter, maple syrup, and crystallized ginger to form a glaze.
Cut squash in half. Scoop out seeds, and cut squash into slices or chunks. Arrange squash on a non-stick cookie sheet. Lightly season squash with salt and pepper. Brush squash with glaze and repeat brushing every 15 minutes or so. Bake about 1 hour, until squash is tender when pierced with a fork.
