Dom's Oatmeal Banana Treats

Pack these in lunch boxes to insure your kids get their whole grains-- they'll never suspect these are good for them!

1 cup flour
1/2 cup flaked coconut
1/2 cup rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup light brown sugar
6 tablespoons butter, softened
1 ripe banana, mashed
1 egg
1/2 cup raisins
1/2 cup chopped walnuts

Preheat oven to 325 degrees. Grease 2 cookie sheets.

In a large bowl, mix together flour, coconut, oats, baking soda, salt and cinnamon.

In another bowl cream the brown sugar and butter until fluffy. Stir in the mashed banana and egg and beat with a fork until blended. Add the flour mixture, a little at a time. Add the raisins and walnuts.

Drop tablespoonfuls of the batter on to the cooking sheets -- a couple of inches apart and bake 12 to 15 minutes.

Cool on a wire rack until completely cool.

Makes about 18 cookies.
