Dom's Mom's Mozzarella 'n Carrozzo (Cheese in a Carriage)

Mom Always Knows Best!

2 eggs

1/2 cup milk

salt & pepper to taste

cooking spray

4 slices of Italian bread (or sourdough)

4 slices of Mozzarella

Marinara sauce

or

powdered sugar and maple syrup

In a small bowl combine eggs and milk. Sprinkle with salt and pepper.

Spray a large skillet with cooking spray. Soak bread in the egg and milk. Over medium/low heat, toast bread. Top each slice with Mozzarella and a little Marinara sauce. Place two slices together to close like a sandwich and gently continue to cook until cheese is melted.

If making the "sweet" variety, eliminate the Marinara sauce, close the sandwich, and cook until cheese is melted. Top with powdered sugar and maple syrup.

Serves 2
