Country Style Linguini
Nothin' like a home-cooked pasta dinner!
4 tablespoons olive oil
1 onion, chopped
4 garlic cloves, chopped
3 medium zucchini, diced
1 red bell pepper, diced
½ pound prosciutto, chopped
salt and pepper to taste
1 pound linguini or spaghetti
3 eggs
1 cup fresh basil, chopped
½ cup grated Parmesan cheese
In a large non-stick pan, heat olive oil over medium heat and sauté onion and garlic until lightly brown. Add zucchini, red pepper, prosciutto, salt and pepper, cover and simmer about 15 minutes.
Cook pasta al dente. While pasta is cooking, beat the eggs in the serving bowl, and ½ cup of the chopped basil and half of the grated cheese in a serving bowl. Drain the pasta. Pour the hot pasta into the bowl with the beaten eggs and toss. Add the cooked vegetables and toss well.
Serve pasta with the remaining grated Parmesan cheese and the rest of the chopped fresh basil. Momma Mia!
