My BALSAMIC CHICKEN

This recipe consists of 5 ingredients and is the perfect lean and clean meal to keep those New Years resolutions.

You’ll need:
4 boneless, skinless chicken breasts, pounded to about 1/4-inch thick
1/4 cup balsamic vinegar
1 teaspoon Dijon mustard
juice of an orange
2 tablespoons capers
Baby Spinach, set out on a serving platter

Season the chicken breasts with salt and pepper.

Heat some olive oil in a sauté pan or skillet. Add the seasoned chicken breasts and cook over medium heat until golden. Turn the chicken breasts over and sauté until cooked through. Remove the chicken from the pan and place on a bed of fresh arugula spinach leaves. Deglaze the pan with the balsamic vinegar. Whisk in the mustard, orange juice and capers and cook 2 minutes to reduce to a glaze. Pour the glaze over the chicken and serve immediately
