L & J's Memorial Day Ice Cream Sandwich Cake

Super easy and oh so fun, this frozen treats serves a crowd and warms the hearts of kids and adults alike.

The layers of ice cream sandwiches create a fabulous striped effect when sliced! Make it your own by using hot fudge and/or caramel and your favorite nuts or toppings.

• 2 cups heavy whipping cream
• 1/4 cup powdered sugar
or One 8-ounce tub Cool Whip
• 12 vanilla ice cream sandwiches, 3.5 ounces each (or your favorite flavor)
• 1 cup homemade or store-bought Chocolate Fudge Sauce or Caramel, at room temperature for a spreadable consistency
• 1/2 cup chocolate chunks or chips, chopped
• 1/2 cup of your favorite chopped nuts (I like smoked almonds, Lana likes
pistachios!)

Cut a 24 by 12-inch piece of aluminum foil and lay it on a clean work surface.

Using an electric mixer, beat the cream with the powdered sugar until stiff peaks form.

Lay 4 of the ice cream sandwiches side by side, in a single layer, in the center of the piece of aluminum foil (chocolate part flat on the foil). Spread the top of the ice cream sandwiches with a layer of chocolate fudge or caramel, then top with a 1/2-inch layer of whipped cream. Repeat the layers to make a 3-layer pile. Frost the top and the sides of the cake with the remaining whipped cream.

Sprinkle the top of the cake with the chopped chips and nuts. Bring up the side of the foil to surround the cake and gently fold the top and ends of the foil loosely to seal the packet. Carefully place the cake on a plate or small sheet pan that will fit in your freezer and freeze the cake for at least 4 hours before serving.

To serve, let the cake stand at room temperature before cutting.
